here is description of beast blood pellet
"Large medicinal pellets, supposedly formed of coagulated beast blood. Banned by the Healing Church due to their unclear origin.
Grants a spurt of beasthood. Ripping apart the flesh of one's enemies and being rained upon by their splattering blood invigorates one's sense of beasthood, feeding strenght and euphoric feeling alike."

So, it seems from all these item descriptions that blood is a very valuable commodity in Yharnam, especially refined blood.
It talks about blood having an intoxicating effect, and fire to have a purifying effect, but I find it odd that beasts "appear intoxicated by the euphoria of purification".
It seems that there is some link between fire and blood and to me there seems to be two ways to interpret this:
Either the intoxicating effect shows that the beasts being burned by fire is a good thing, or the blood having the intoxicating effect is signs of indulging in blood being a bad thing.
I think the latter is true. Indulging in blood leads you to become a beast, and so far it seems like becoming a beast is something you want to avoid.
So, it seems like Yharnam residents are misguided in their thirst for blood.
They believe that the blood helps them (wasn't there a line about how the main character would feel better with "a bit of Yharnam blood in him"?) but in fact it is destroying them.

1) As of now, the only way for me to buy stuff is through the messengers in the dream refuge.
After something significant happens, say I beat a boss, or obtain badges that explain some lore, the messengers will have new items and weapons. I have not found a npc who sells stuff yet in Yharnam

3)Yes the boss i was referring to in the cathedral is the maiden in white, but.....She does not turn into the tentacle thing slit08 mentioned about.
This is a completely different monster. Larger than the cleric beast and way tougher. And the boss is an animal that has 4 legs, but actually walks similar to the cleric beast. Also looks a bit different to the cleric beast.

4) And yes specific bosses have cutscenes. Gascoigne and the maiden in the cathedral so far.

Finally after beating the 5th boss, I used the item it drops to open a door to the forest area. A NPC mentions that there is a castle far beyond the woods.
This is where the first inhuman was created or something. But he was being a cryptic dick as well. That's as far as I got.
